Clams, and some unusual shellfish

We buy the best surf clams from Scotland and freeze them down ourselves. Cook as live. 300g. Most recipes for live mussels easily adapt to these clams.Sometimes these are not available so we use french live clams.You will know if they are live, as they will have holes in the bag to let them breath. These clams are sweet tasting and unusual. Live. Laid in shell as a starter they look great. Cook as for other clams. When they are available they are well worth trying! We have a recipe. 1kg, which would serve two or three, depending in whether they were a main course or a starter. Sometimes only frozen from live are available, if this is the case we will tell you. Just cook from frozen as fresh.
