The octopus is found in all tropical and temperate seas, they can vary from 4cm to 10 m long! Okto-pous means "8 feet" in Greek. They are popular in the Mediterranean area and the Far East. Octopus needs long cooking to make it tender (it is said that Mediterranean fishermen beat their octopus 99 times against the rocks before cooking! Or you can freeze it, this seems to have the same effect!). Simmer the octopus for 1 hour in salted water, dry on kitchen paper, cut into small pieces, then cook according to your recipe. SUSTAINABLE.
