|  | |  |  Lime and chilli scollops with noodlesThis is an easy 10-minute recipe. Heat a frying pan or griddle. Cut scollops in half horizontally and fry for one minute on each side. Boil some water in a kettle, then pour onto egg noodles in a pan and cook for 2 minutes. Cook some mixed vegetables in a microwave for 3 minutes. Mix some olive or sesame oil with the juice of a lime and some chilli flakes or a pinch of chilli powder. Toss everything together in a heated serving bowl, and garnish with some chopped or whole roasted cashews or peanuts. Hints for success - there are no exact instructions, just adapt this recipe to what you have in the storecupboard. Two scollops will be enough for each person. You can make this recipe with prawns, use about four for each person - order tiger prawns. You can use fresh or frozen vegetables, they should be cut up into small pieces of less than 2cm. Sweetcorn, peas, broccoli and carrots are all suitable. If you use fresh vegetables, they can be quickly steamed if they are cut up into small pieces. The juice of one lime will be enough for four servings. One tablespoon of sesame oil will be enough for four servings. Use olive oil if you don't have sesame oil. The instructions on the packet of egg noodles will tell you how much to cook for each person.
