NEW WILD SAMPHIRE IS BACK IN SEASON! Samphire is a salty marsh grass, eaten raw, as a garnish to fish, in a salad, or steamed like asparagus. It's around from late spring to summer. It's very light in weight, so a little goes a long way, 100g.Samphire is salty and crisp. It can be eaten raw, just rinse it and serve. If you would like it cooked, it only needs to be put into boiling water for 2 or 3 minutes, then drain and put into iced water, drain again and serve cold. Serve hot by omitting the iced water stage, or cook very briefly in hot olive oil or butter, and add variations of capers, chopped crisp bacon, mushrooms or herbs. The choice is yours. It seems to go well with fish, and lots of restaurants serve fish on a bed of samphire.
