is really good at the moment, it is a real summer fish. We're getting some big fish, a good cutting size. Order as steaks or fillets. Most hake from Cornwall is sent to Spain, Portugal and Italy where it is highly prized, order some and find out why! Hake is soft when uncooked, it firms up with cooking. Nothing nicer than a hake fillet dipped in a light batter (good made with soda water and seasoned flour) and deep fried.

We’ve waited a long time, but sardines are at last coming
good! Order whole sardines, cleaned sardines or sardine fillets. They are all
great on the barbecue, if using fillets they only take a few minutes.

Large fresh herrings from Norway! They are hard to get these
days as most go to Germany. If you like herrings buy to put in your freezer, only
because they are so scarce. Most will have hard roe, if you particularly like
herring with roe put a note when you order – there’s space where you write "leave
in porch” etc. They will be 250g, but that’s a minimum. They are very
economical, only £2.65 each.

BUTTERFISH OR REDFISH
Butterfish or redfish from Iceland. They look a bit like red
snappers, but might be nicer! Great on the barbecue. These featured last week but these are twice the size! You'll get at least 1.5kg. So nice to
look at, they will be a real conversation piece! Only 11.60, that's a 10% drop in price.

Wild large Atlantic halibut, a wonderful fish, a bit pricey
but there’s no waste and it’s quite meaty, so you don’t need to go overboard in
your portion sizes. A 150g fillet (plenty for one) is £6.50, that’s a bargain.
Don’t let halibut dry out when cooking, and it’s robust enough to take Chinese
or other Asian flavours, but it’s also good cooked simply as in the photograph –
baked with almonds and a few small knobs of butter on top.
