This is Cornish monkfish, and it arrives in our shop within 24 hours of being caught. Not all good fish comes from the West Country, but Cornish is the best monkfish! These are fillets from BIG fish, the ones that have all the quality and flavour. If you'd like bigger fillets than these that we have cut to 500g, just ring us on 0118 939 3076.
Monkfish is all enormous mouth and tail, hence its name of sea devil or frogfish. We like it because it is a "meaty" fish and holds together well, so is ideal in fish soups, and fish kebabs. It can take strong sauces, so is ideal in curries.A very ugly fish! But don't let this put you off, you won't be seeing its ugly face but luscious fillets weighing 500g.

Some ideas for monkfish - for a great starter, poach the monkfish, then break it up into chunks and mix with smokey bacon, some spring onions and small tomatoes, dress with some balsamic dressing - see a photo here. Monkfish wrapped in bacon is simple to make,just use thin-cut streaky bacon to wrap the fillets in, and bake in a hot oven for about 15-20 minutes until the bacon is crispy - by that time the monkfish will be cooked. If you can't find really thin-cut bacon,thin it out by scraping the flat of a knife along the rasher, or just use prosciutto. Cajun-style monkfish is easy - cut the monkfish into 5cm pieces, coat with Cajun seasoning and bake - serve with rice and a salsa, photo here. There are other recipes here.
