The Smelly Alley Fish Company turbot and how to cook it:

Quite the nicest fish you can eat! Superb quality! These are large, day fished from Newlyn. Farmed turbot are increasingly available, but not, in our opinion, as good as these wild turbots. 

If you bake a turbot whole, and serve it whole, that's a meal fit for a king. They are so easy to cook - just place them whole on a sheet of baking paper on a flat baking tray, 20 minutes in a preheated oven at 220
C gas 7 is fine, the fish will be kept moist and the skin will crisp up, making it really easy to remove. Cut open the skin, take out the top two fillets, cut the backbone at the head, take it off, take out the bottom two fillets - EASY! We serve this with mini tomatoes, capers and black olives that we have roasted in olive oil in the same oven.  And cooking on baking paper means it's easy to clear up, just roll up the paper and put it in the recycling, no mess!
