A large pack of frozen lemon sole goujons that will easily serve 5 as a starter. Fry for a few minutes (even on the barbecue!) or bake in the oven for 10 minutes at 200°C, gas 6. Great with a home-made tartare sauce - beats the bottled variety by a mile. Just mix a few chopped gherkins, some capers and chopped parsley, dill or tarragon into a couple of tablespoons of mayonnaise. Serve these with some oven chips or frites, they are a great standby, so keep a pack in your freezer.
