Scallops Maple Butter | The Smelly Alley Fish Company

Scallops in maple butter

When you’ve had these at a barbecue, you’ll never want a beefburger again! Can also be cooked in the oven.

King scallops order two each for a small starter, four each for a main course
The same number of bacon slices – back or streaky, smoked or unsmoked
If you can find maple butter, use this! Otherwise:
250ml maple syrup
100g melted butter
A tablespoon grated ginger
Optional chilli flakes
Cocktail sticks – soak in water for a couple of hours, this helps them not to burn on the barbecue

Cook on the barbecue or in the oven (200°C)

Cook the bacon until half cooked – on the barbecue or under the grill. Take it off the heat before it goes crisp.
Remove the roes from the scallops or leave on.
Melt the maple butter or mix the maple syrup with the melted butter and grated ginger. Adding a few chilli flakes is optional at this stage!
Wrap the half-cooked bacon around the scallops and secure with a cocktail stick.

Cook on the barbecue or in the oven.
Keep spooning maple syrup over the scallops as they cook.

Turn after three minutes, total cooking time a maximum five or six minutes.
