You need a hot frying pan or griddle that's been wiped with olive oil, salt and pepper, some herbs (your choice, dried herbs are fine), and seabass fillets. Cook the skin side first for a minute or minute and a
half, flatten if down if it looks like curling up, sprinkle with salt, pepper and herbs, then turn over and cook for another three minutes. Easy! Serve with the juices from the pan and half a lemon to squeeze over. Or try this recipe for sea bass fillets baked.
