Scallop shells are a lot cheaper buying this way, only 60p each compared to £1 each! The simplest way to make Coquilles St Jacques is to pour a tablespoon of double cream over the scallops in the shell, put some grated cheese and breadcrumbs on top, and grill. Take the scallops out of the fridge before cooking, if they are too cold they won't cook enough before the cheese and cream are bubbling. Other recipes get more and more complicated, with a border of mashed potatoes, adding a wine sauce, mushrooms etc, everybody will have their favourite.

When you've eaten your scallops, you'll have the shells to use later. They make great dishes for starters such as prawn cocktails or tiny fish pies. In the "olden days" some restaurants used them as ash trays - some things have changed for the better. We wash our shells in the dishwasher, it seems to work!
